DESCRIPTION:Brendon Duffy\, archivist at CentraCare\, will present Precedented Times: The 1918-19 Spanish Flu in Central Minnesota at 9 a.m. Wednesday\, June 9\, at our Breakfast Club. As World War I was coming to an end\, the world battled an invisible opponent – the Spanish Flu of 1918-19. This pandemic\, which took an estimated 50 million lives worldwide\, had major effects on medical care\, public health and personal hygiene. Duffy will share what life was like in Minnesota during the Spanish Flu and talk about how that crisis shaped healthcare in Central Minnesota in ways we may not realize.  \nDuffy is an experienced researcher and presenter who strives to tell meaningful stories. He has been an archivist with CentraCare for more than four years and is a certified genealogical researcher. He also worked several years for St. John’s University\, Collegeville.  \nAttendance for this event is limited to 40 people due to COVID-19 space limitations. Reservations are required and will close at noon Tuesday\, June 8. Please call the Museum at 320-253-8424 to register. The Breakfast Club program is free for Stearns History Museum members and $7 for nonmembers. Coffee and rolls will be provided.

Sometimes the smallest\, otherwise overlooked detail can enable even the experienced genealogist to push a family line back another generation or two. Feel free to watch any time. \nIn the Victory Kitchen with Eric: The Upside-Down Spam Pie\nEric is back in the Victory Kitchen! And this time he’s not messing around- he is armed with SPAM! For as much flak as SPAM gets sometimes\, without it\, WWII could have gone a little differently. So to celebrate this glorious meat concoction\, Eric will be doing a series of recipes on SPAM\, all while giving you some little historical nuggets about the wonder meat. This week- an upside-down SPAM pie! \nNOTE: This video is a little quiet\, so don’t be afraid to turn up the volume! \nSPAM upside-down pie recipe: Line an 8-inch mold with SPAM slices and fill with baking powder biscuit dough (prepared or home-mixed)\, well-laced with tiny cubes of SPAM. Bake 40-45 minutes at 425 degrees F. Turn it out on a platter\, fill center with a tart cheese sauce (as one made with tomato or horseradish) and watch the family turn out and fill the table in a hurry! \n \n

Collections Curator Eric Cheever shows us how to make a couple of precious eggs go a little further\, something English and American soldiers would do when they got the chance! \nEgg in a Nest (Mock Fried Egg): -2 fresh eggs -water -2 slices fresh bread -bacon grease \nBeat the eggs in a bowl and set aside. Add bacon grease to a warm pan. Cut a hole in the center of two slices of bread\, set aside. Dip one side of each slice of bread in water\, then add to the pan. Feel free to watch any time—Sunday is only a suggestion. \nWatch “Harvest History: Old School Pumpkin Pie”\nIt’s time for another episode of Harvest History! In this episode\, we are going to look at that most glorious symbol of fall in America\, the pumpkin! We’ll go through a brief history of this crop’s dominance in the Americas\, and then show you how to make a pumpkin pie the way early American settlers would- by baking a custard right there in the pumpkin! Give it a try with your family at home- trust us\, it’s delicious! \n \n  \nRecipe for “Pie in a Pumpkin” \n\nCut open and scoop out the seeds and pulp from a small pie pumpkin \nIn a mixing bowl\, mix together: -3/4 cup sugar -3 eggs plus 4 egg yolks -1/2 TBSP of vanilla extract \n-Whisk until smooth\, then add: -2 cups heavy cream – 1tsp corn starch -pinch of salt.\nWhisk until smooth \nPour into hollowed out pumpkin\, leaving about one inch of room at the top \nBake at 400 degrees for 15 minutes\, then place tin foil loosely over the top of pumpkin\, and bake for another 15 minutes \nTurn heat down to 375\, place top of pumpkin on baking sheet\, and bake for another 15 minutes \nRemove tin foil\, and bake for 30 additional minutes \nTurn oven off\, let custard/pumpkin cool for about an hour\, then place in fridge for at least 6 hours\, so custard can set \nScoop custard out of pumpkin\, and enjoy!
